Satay Salmon

This was a great post workout meal following my CrossFit Open 17.1 workout (see it here).

High protein and lots of nutritious veg to help with muscle repair and energy replenishment.

I will be posting more tasty, healthy meals and recipes over the coming weeks so keep your eyes open :D

The recipe for this one can be found below!   

The Sauce
To make the Satay Sauce you will need:
  • 1 red chilli
  • 1 clove of garlic 
  • 2 tbsp of raw organic peanut butter
  • 150ml ​Coconut Milk
  • 1 tsp of dark soy sauce
  • 1 tsp of raw organic honey
  • pinch of pink himalayan salt
Add all the ingredients into a blender and blend until smooth. 
The Salmon
Preheat the oven to 170 degrees.
Place the salmon fillets into an overproof dish and pour the sauce over them.
Cook at 170 degrees for 20-30 mminutes
The Veg
Heat some coconut oil in a frying pan,  Add the veg and fry until cooked.  I used:
  • ​Red Pepper
  • Broccoli
  • Asparagus 
  • Green Beans
  • Spring Onions
  • Savoy Cabbage
  • Mushrooms
Once the veg is cooked add 1 tbsp of dark soy sauce.
